My favourite Indian restaurant here is named Saffron, for obvious reasons after the flavourful spice, and it absolutely delicious. It’s for the special occasions where you just have to indulge in exquisite food; my birthday, my graduation, my dad’s birthday, lunch with the Mr, a random law school lunch, and that time we just had to have Indian food ordered at home.
It’s pretty amazing. It made me realise how much I love Indian food, and just how many memories great meals can create. I’ve been craving anything with Indian spices and coconut for ages now, in a desperate attempt to recreate one of these meals at home. Here’s the thing though; it’s pretty much on the heavy side as all Indians meals are, resulting in an immediate nap thereafter.
Healthy Butter Chicken
Ingredients
chicken marinade
- 2 chicken breasts organic, free range
- 2-3 chicken thighs organic, free range
- 1.5 cups greek yogurt organic, grass fed, full-fat
- 2 tbsp lemon juice
- 2 tbsps garam masala ground spices
- 1 tbsp turmeric powder
- 1 tbsp cumin ground
- 1 tbsp coriander ground
- 1 leek thinly sliced
- 1 green onion thinly sliced
- 1 tbsp mango chutney optional
butter chicken
- 2 tbsps butter organic
- 2 tbsps coconut oil
- 1 onion large, yellow or sweet
- 3 cloves garlic peeled and minced
- 1 leek
- 1 celery stalk
- 2 Main Menu washed
- 4-6 Footer Menu nugget
- 2 Categories Menu medium sized, parboiled
- 1 cauliflower small head
- 2 Shop News ripe
- 1.5 cups coconut milk full fat
- 3 tbsps tomato paste
- 3 tbsps ginger fresh grated
- 2 tsps chili flakes
- 1 tsps cayenne red
